Allergen & Dietary Notice

Important information for guests with allergies and dietary needs.

At Capriciano Osteria we cook from a deep Italian tradition that draws on wheat, dairy, eggs, nuts, seafood, and shared techniques in a single open kitchen. This Allergen & Dietary Notice tells you, plainly and honestly, what allergens are present in our kitchen, how our menu markings work, what we can and cannot promise, and what we ask of guests with severe allergies. Please read it before you dine with us, and please always tell our team about a food allergy or dietary restriction before ordering.

1. Allergens Present in Our Kitchen

The following major allergens are present in our kitchen and may be in any dish, even if not listed as an ingredient, because of shared equipment and shared preparation surfaces (the “Big 9” under the federal Food Allergy Safety, Treatment, Education, and Research (FASTER) Act of 2021, effective January 1, 2023):

  • Wheat and gluten
  • Milk and dairy
  • Eggs
  • Peanuts
  • Tree nuts (including almonds, hazelnuts, pistachios, walnuts, pine nuts)
  • Fish (finfish, including anchovy, sardine, branzino, swordfish, tuna)
  • Shellfish and crustaceans (including shrimp, prawns, crab, lobster, oysters, clams, mussels)
  • Soy
  • Sesame

Our kitchen also uses cured pork products, fresh herbs, citrus, garlic, onions, and a wide range of spices that can be allergens for some guests; please ask if any specific ingredient is a concern.

2. Cross‑Contamination

Our kitchen is a single, open, shared environment. Wheat flour is used daily for pasta and pizza; we share preparation surfaces, ovens, mixers, knives, cutting boards, sauce pots, pasta water, and fryers across menu items. Wood‑fired oven service mixes airborne flour and crumb across cooking surfaces. We cannot guarantee that any dish is completely free of any allergen, and we make no representation that any item is certified allergen‑free or certified gluten‑free. Guests with severe allergies should consider this carefully before dining with us.

3. Menu Markings — What They Mean (and What They Do Not)

Where shown on the menu, the abbreviations below mean the following:

  • GF (Gluten‑Free) — the dish, as listed, is prepared without gluten‑containing ingredients. It is not certified gluten‑free; cross‑contamination from shared equipment, fryers, or airborne flour is possible.
  • DF (Dairy‑Free) — the dish, as listed, is prepared without dairy ingredients. It is not certified dairy‑free; shared equipment may have been in contact with dairy.
  • V (Vegetarian) — the dish, as listed, contains no meat, poultry, or fish flesh. It may contain dairy, eggs, honey, or animal‑derived rennet.
  • VG (Vegan) — the dish, as listed, is prepared without any animal‑derived ingredient. Equipment, including pasta water and oils, may have been in contact with animal products.

Vegan and gluten‑free pasta is available on request. Please tell your server at the time of ordering.

4. Guests With Severe or Anaphylactic Allergies

If you have a severe or anaphylactic allergy, we ask that you take all of the following steps:

  1. Tell us at the time of booking so the kitchen can plan and so the manager on duty can be aware.
  2. Tell your server on arrival and confirm with them before you order. Our servers are trained to repeat the allergy back to you and to confirm with the kitchen.
  3. Ask to speak with the chef or manager if you would like additional reassurance about a specific dish or preparation.
  4. Carry your auto‑injector or other emergency medication with you. We are not equipped to administer epinephrine.
  5. Understand and accept the risk. Even with reasonable precautions, our kitchen cannot guarantee an allergen‑free preparation. By choosing to dine with us with a severe allergy, you assume the risk of a reaction, and you release Capriciano, its owners, members, managers, employees, and contractors from any claim arising from the presence of an allergen in any dish to the fullest extent permitted by law and consistent with Cal. Civ. Code §1668.

In the event of a serious allergic reaction on the premises, our staff will immediately call 911 and notify the manager on duty. The decision to administer your auto‑injector or other medication is yours; our staff is not licensed to administer epinephrine.

5. Modifications and Substitutions

We are happy to make reasonable modifications to accommodate dietary needs — remove a garnish, substitute a side, or hold a sauce. Some dishes, by design, cannot be modified without compromising the preparation; your server will recommend alternatives in those cases. Significant modifications or substitutions of premium ingredients may incur an additional charge, which your server will disclose before the order is placed.

For complex or layered dietary requests (multiple allergies, religious dietary constraints, ketogenic / FODMAP / low‑histamine, etc.), we ask for at least 48 hours advance notice so the kitchen can plan.

6. Raw and Undercooked Food Notice (California Retail Food Code)

In accordance with the California Retail Food Code, Cal. Health & Safety Code §114012:

Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions.

This notice applies in particular to:

  • Oysters served on the half shell and other raw bivalve mollusks (risk of Vibrio);
  • Beef carpaccio and shrimp carpaccio;
  • Tartare or other raw‑protein preparations on offer from time to time;
  • Any item prepared rare or medium‑rare upon request, including steak and burgers;
  • Soft‑cooked or runny‑yolk egg preparations.

Guests who are pregnant, immunocompromised, very young, or elderly are encouraged to avoid these items.

7. Religious, Cultural, and Certified‑Diet Honesty

Capriciano does not maintain a certified kosher, halal, vegan, or gluten‑free kitchen. We are happy to identify dishes that are prepared without specific ingredients and to make reasonable substitutions, but we do not, and cannot, represent that any dish meets the standards of any religious dietary law or certification body. Guests for whom certification is essential should consider this before dining.

8. Children

Our menu is suitable for guests of all ages. On request we can prepare simpler portions of pasta, pizza, or grilled items for younger guests. Please tell us about any allergy a child has — the “Big 9” allergens above apply equally to children’s items. We ask the responsible adult to confirm any modification to a child’s order with the server. Whole nuts, olives with pits, and small bones in fish or chicken can be choking hazards; please supervise younger guests accordingly.

9. Alcohol and Pregnancy

We serve alcoholic beverages only to guests of legal drinking age (twenty‑one (21) or older) and require valid government‑issued photo identification, consistent with Cal. Bus. & Prof. Code §25658. We do not serve alcohol to any guest who appears obviously intoxicated, consistent with Cal. Bus. & Prof. Code §25602. As required by Proposition 65 (Cal. Health & Safety Code §25249.6 et seq.) and by the federal Surgeon General’s warning under 27 U.S.C. §215, a warning regarding the consumption of alcoholic beverages during pregnancy is posted on our premises.

10. Advance Notice for Dietary Accommodation

For maximum flexibility, please tell us about an allergy or dietary restriction at the time of booking. For complex accommodation, please give us 48 hours advance notice. We will always do our best with shorter notice but cannot promise the same range of options.

11. Server Attestation

Our servers are trained, when a guest declares an allergy, to (a) repeat the allergy back to the guest, (b) confirm with the kitchen before the ticket is fired, and (c) verify with the guest that the plate delivered matches the order. If you do not hear this confirmation, please flag it before tasting.

12. Changes to This Notice

We may revise this notice from time to time as our menu, our kitchen, or applicable regulations change. The revised version will be posted at this URL with an updated “Effective Date.”
